What do you do when you have leftovers in your fridge? I try to combine them, this is what happened today. I had rice, minced meat, egg yolks and corn. Two meal popped into my mind, the fried rice and the mexican rice, I didn’t wanted to choose so I created a fusion of them, in my own way, so now this is it, Fusion, the leftover meal!
- 1 kilo Cooked rice
- 1 kilo Minced meat
- 4 Eggs
- 1 cup Corn
- 1-2 Onion(s)
- 3 Tomatos
- Oil (just for the onions)
- Sesame seeds
- Seasoning: mexican seasoning, salt, pepper, paprika
If you can multitask, you can do the two-part the same time, but I made the meat part first, so I’ll write it down first. Dice the onions, put one half to a pot (you’ll need the space) and the other half to a larger pan.
So firstly you’ll need the pot, add a little oil and fry the onions, but as it gets golden color, add the minced meat, stir it constantly and add the seasoning. When it’s almost ready, add the corn and the diced tomatoes.
Now you can start to fry the rice, fry the onions and add the sesame seeds when both of them turned golden brown, add the rice and the eggs, stir this too.
Okay, so both part is ready? Add them to a large bowl and mix them! Aaand it’s done! :))
You can change any part, it depends on your taste and/or what you find in your kitchen, but I think it’s worth to try!
