Spinach Pesto is the pure green-gold and now my family’s favorite! This pesto is made with baby spinach and cashews. Spinach pesto is so simple to make and so tasty, you’ll put it on everything!
I’ve made Spinach Pesto for weeks after weeks now and my family keeps requesting it. Can’t believe I haven’t tried it sooner. As I said before, it’s so simple and quick to make, only a minute or two and you’ll have your own green-gold!

This pesto is so versatile! We put it on pasta, toast, even on grilled cheese sandwich and on pizza! So yummy!
Baby Spinach Pesto – Pesto Pizza
- 4 bags Tesco Baby Spinach 4 x 80g
- 1 cup Cashew Nuts
- 1 cup grated Cheese
- 4 cloves Garlic
- 1 or 2 cup Oil depends on the texture you want
- 1/2 Lemon's Juice
- Salt Pepper to taste
Put the spinach in a blender.
Grate cheese on top.
Add the cashew and the garlic cloves.
Squeeze the lemon on them.
Add the salt and pepper.
Pour the oil on top.
Blend everything together until it has a smooth texture.
Store it in the fridge.
For the Spinach Pesto Pizza, I used a pre-made pizza dough and made a little pizza bar.
I still surprise how great quality these pre-made pizza dough has nowadays! I only had to roll it out on a pan, put my toppings and bake it for 15-20 minutes.
So this pesto pizza had spinach pesto (obviously), very thin slices of onion, mini mozzarella balls (halved) and chicken breast cold cuts. For the pizza bar, I sautéed some mushrooms, halved some more mozzarella, grated cheese, diced red bell pepper, sliced some olives and poured some extra pesto in a glass if anyone wanted some more!
The pizza bar was really popular, and everyone loved the pesto pizza!
Oh, I almost forgot to mention that before spinach pesto, my family hardly ever ate any spinach and now it’s their favorite. So this pesto is a great way to endear spinach with everyone!
